Stracchino, also known as crescenza is a type of Italian cow's-milk cheese typical of Lombardy, Piedmont, Veneto and Liguria. It is eaten very young, has no rind and a very soft, creamy texture and normally a mild and delicate flavour. It is normally square in shape. Stracchino can be spread on bread and served with Rocket or with salami or fresh fruit. The mild, slightly sour flavour also tastes good with honey, fruit spreads and chutneys.
Its lifespan is short – it is best eaten within a week!
